Bread Baker’s Apprentice: CHALLENGE #5 Casatiello

Here is my try at the BBA Challenge #5 Casatiello.
I added 'lots' of bacon bits, pepperoni and Swiss cheese.
I'm not sure why I decided to do a braid. I guess because I had never done one before. I see that next week it calls for a braided Challah. LOL. OH well I'm all practiced up.
Hope the "S" is obvious enough. :o)
The crust is flaky and yummy and the crumb is slightly open and very tasty.

  14. I just finished the brioche and haven't posted yet, but I can't believe you put bacon bits and salami (and the cheese, of course) in this one after making the rich man's brioche! You are very brave; I've increased the length of my daily hikes in the hills and my jeans are still getting tighter. With 40 or so breads to go! :)
    Your braid with its "S" looks very cool.

    Yes, this is the recipe after the brioche. I didn't use salami. I used the soft bacon bits in the package from the store (the whole thing) and some cut up pepperoni and swiss cheese.
    I need to get out more walking too. :)

  16. I love the braid idea and of course the S on top. I am baking another batch today because we already finished the ones I made last Monday. That's how much we like this bread.:)

    I'm also excited about the next, challah, which is our favorite.

  18. Looks great, Susie! My husband would love it--he likes pepperoni and swiss cheese and I don't. =) I haven't decided yet what to put in mine; I'm still working on the regular brioche and trying to get my bagels posted.

  26. The braid looks good! I was just going to throw mine in a wicker basket because I do not have any brown paper bags floating around.

    I am thinking salami and bacon cheddar cheese for mine.

I'm always going to be behind in commenting as I am baking with the BBA Slow & Steady group (posting every other week), but late or not, I wanted to say that this is just lovely and I would never in a million years have thought to braid it, so this was very interesting and fun to see. You have such a way with breads...okay, in 2 weeks I will comment on the Challah, but I did sneak a peak! Lovely, lovely.
