Bread Baker’s Apprentice: CHALLENGE #3 Bagels


Ok now for my try at the 3rd recipe for bagels. CALLING ALL PRO'S! I have a question so please read through. :)
This was quite an experience for me. I normally do just bread. LOL. Well, I have tried baguettes once, cinnamon rolls and a boule but that's it.
I made the raisin/cinnamon bagels and put cinnamon sugar on the
tops. I find that they are VERY chewy and a tad doughy. Not doughy as in undercooked but you know doughy. I like them but I don't love them. I guess I'm use to the stale harder dried out ones in the store. My daughter in law stopped in and tried one and loved them. :)
As you can see in the photos half of the bagels have a rounded look and others are flat. Why did some of them flatten out like that?
I boiled one minute each side and baked for the total of 10 minutes.
Of course I did my signature "S" in a bagel. LOL!
Would you call these a success or not????

  1. I would say success! Anything home made = sucess. I think they look yummy. Looking forward to trying. I will be outdoors in a primitive setting but...we'll see! Wish me luck!! Happy baking...on to Brioche!!

    Thanks for saying they look delicious and that you like the "S" bagel. I was intimidated too but it wasn't all that bad. I would just like a less chewy bagel and don't know how they got so chewy. :)

  14. Nice "S"! It's such a great shape. ;)
    As to the "chewy" part, I noted that as well (in the past, I'm baking Artos tomorrow). Since I'm from the left coast, I don't really know from bagels, but I have read everywhere that *real bagels* are supposed to be chewy and dense. I do like these!

    Yes...cream cheese. I did try one last night with cream cheese. Very tasty.
    You could have stopped in yesterday morning but I didn't have them done then. :o)

    I'm going to try Libby's bagels next time. They are egg based and not so chewy. They are actually called "Libby's Senior Citizen Bagels". LOL! I love her blog.

    LOL, I almost forgot the "S". The bagels had been in the fridge for a few hours and I thought to go grab one and shape it. LOL.

    It is a success if it is chewy because I prefer my bagels chewy.:D

    I will bake mine tomorrow for brunch, they're happily resting in the fridge.:)

  27. Looks pretty successful to me. Those would be gone in no time with my two 16 year old sons around...no time at all with some of the fellow swimmers dropping by! Great job.

  29. Susie, the chewiness comes mainly from the boiling stage. As some have noted, "real" bagels are supposed to be chewy and dense. If you don't want them as chewy, try boiling for less time - maybe 30 seconds each side.

  31. Pulling from what I remember in my first bagels, I agree with gaaarp: less boil = less chewy. Bake longer for the doughy. They should be dense (very tight crumb).
    I'm impressed with the uniformity of yours ... well except for that lovely S hehe!!!
    I'd say they were a huge success!!!

    Thanks for the tips. I 'will' make them again sometime and try the 30 second boil and will bake them longer.
    I weighed every single dough ball maybe that is why they look uniform.

    Thanks! They were ok. I loved the flavor. I think I boiled them a tad too long and didn't bake them long enough. I will try them again.
